4 Light and Delicious Weeknight Meals

When the weather is warm, living is easy – and your cooking should be, too. Whipping up a weeknight meal the whole family will enjoy is a breeze in your new, gourmet kitchen at Centennial. Here are four ideas for meals that are light, healthy and satisfying.

Vegetarian Lasagna
Pasta is always a hit with kids, but the key is to find a meal that is filling, yet not too heavy. Lighten up your favorite lasagna recipe by subbing out the ground beef with your favorite veggies. You’ll want about four or five cups of chopped vegetables such as zucchini, yellow squash, onion, mushrooms, bell peppers and/or spinach. Cook the veggies with a can of crushed tomatoes to make your sauce (add some salt and a pinch of red pepper flakes for a little bite), and assemble the noodles, sauce and cheese in the pan as usual before baking. If your kids are old enough, let them help chop the veggies (younger ones can pitch in, too, by helping layer the dish).

Grilled Chicken Salad With Peaches and Bulgur
Peach season runs from July through early September, so peaches are the perfect ingredient for your next dish. Take your basic grilled chicken salad to the next level by adding peaches and the whole-grain goodness of bulgur. Cook about two-thirds cup of bulgur according to the package directions. While the bulgur is cooking, season a couple of chicken breasts with salt and pepper before throwing them on the grill or grill pan. Place the bulgur in a large bowl along with two cups of cherry tomatoes, two cups of sliced peaches, and four cups of packed arugula or your favorite salad green. Add some salt and a little olive oil and rice vinegar, and top with the sliced chicken. It’s quick, it’s easy and it’s a perfect weeknight meal.

Mediterranean Chickpea Salad
If you’re looking for a vegetarian meal, one tasty option is a Mediterranean chickpea salad. Chickpeas are a great source of both protein and fiber, making this a salad that is both healthy and satisfying. Simply combine two cans of chickpeas with chopped cucumber, chopped bell pepper, sliced onion, and some kalamata olives and feta cheese. Sprinkle the salad with salt and pepper, and add your favorite vinaigrette. This salad is cool, refreshing and so filling that you won’t hear “I’m hungry” around the house for hours. Looking to dine alfresco? Take dinner outside to your covered patio for some fresh air and nature all around.

Stir-Fry
Stir-fries are some of the easiest, healthiest meals you can prepare for your family. The hardest part is chopping the vegetables. Choose a number of nutritionally dense veggies in season, including zucchini, squash, eggplant, sugar snap peas and bell peppers. You can use the protein of your choice, like chicken, beef, shrimp or tofu. You’ll want to cook the protein over medium-high or high heat before removing it from the pan and cooking the vegetables. Return the protein to the pan, add your favorite stir-fry sauce, and let everything cook for a minute or two. Serve over rice or noodles. The best thing is you can customize the ingredients and flavors to create a weeknight meal that appeals to every member of your family.
